Kebabs offer authentic Turkish flavors that originated mainly in eastern Turkey and eventually spread throughout the country. It is generally grilled over a charcoal fire; the meat is chopped by hand and seasoned with various spices.
There are many kebab types, among the most common of which are Adana kebab, which is made with red pepper, and the Urfa kebab, made without pepper.
Shish kebab, eggplant kebab, tomato kebab, Alinazik, and vegetable kebab, all of which are cooked by grilling the meat and vegetables on skewers, are among the specialties of some of the best restaurants in Istanbul.
